#BuntdBakers: Strawberry Jam Bundt Cake [Bizcocho de Mermelada de Fresa con Merengue]

El mes pasado no me dio tiempo a preparar la receta que tenía pensada pero aquí estoy de nuevo con mi propuesta para el reto BundtBakers de este mes. En este caso el tema eran “fresas” y yo he hecho un bundt con mermelada con la idea de poder realizarlo en cualquier época del año. Además para la decoración usé merengue y fresas naturales, que es una combinación genial.

INGREDIENTES:

  • 200gr Aceite Girasol
  • 350gr Harina
  • 1 Cucharadita Bicarbonato
  • 1/2 Cucharadita Levadura
  • 1/2 Cucharadita Sal
  • 200gr Azúcar
  • 6 Huevos L
  • 2 Cucharaditas Pasta Fresa (opcional)
  • 4 Cucharadas Mermelada Fresa
  • 1 Cucharadita Vainilla
  • 200gr Yogur Natural o de Fresa

ELABORACIÓN:

  • Antes de nada encendemos el horno a 180ºC con calor arriba y abajo para que vaya alcanzando la temperatura que necesitamos.
  • A continuación batimos los huevos junto con el azúcar hasta que doblen volumen y luego le añadimos el aceite y mezclamos hasta integrar.
  • En un bol diferente tamizamos la harina junto con la levadura y la sal. Cogemos la mitad de esta mezcla y la añadimos a la de los huevos, luego incorporamos el yogur, la vainilla, la mermelada y la pasta de fresa. Para terminar incorporamos la harina restante.
  • Ponemos en un molde previamente engrasado y llevamos al horno durante unos 45 minutos o hasta que al pinchar con un palillo este salga limpio.
  • Dejamos templar sobre una rejilla unos 15 minutos, luego desmoldamos y esperamos que se enfríe por completo sobre la rejilla antes de ponerle el merengue.

PARA EL MERENGUE:

Ingredientes:

  • 80gr Claras
  • 70gr Azúcar
  • 3/4 Cucharadas Sirope Maíz
  • 1 Cucharadita Vainilla en Pasta

Elaboración:

  • Batimos las claras, junto con el azúcar y el sirope de maíz al baño maría hasta que comience a estar caliente y el azúcar esté fundido.
  • Ponemos en la amasadora y batimos con las varillas unos 7 minutos (hasta que se formen picos firmes y brillantes).
  • Incorporamos la vainilla, mezclamos y usamos inmediatamente. Si lo dejamos reposar y luego lo utilizamos quedará una textura como cortada.

STRAWBERRY JAM BUNDT CAKE

We take turns hosting each month and choosing the theme/ingredient. This month was Tammy’s turn from Living the Gourmet.

INGREDIENTS:

  • 1 Cup Sunflower Oil
  • 3 Cups Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1 Cup Sugar
  • 6 Large Eggs
  • 2 Teaspoon Strawberry Paste (optional9
  • 4 Tablespoon Strawberry Jam
  • 1 Teaspoon Vanilla
  • 1 Cup Natural or Strawberry Yogurt

METHOD:

  • Preheat oven to 355 F.
  • Spray the bundt pan (I used Elegant Party, from Nordic Ware).
  • Sift the flour, the baking powder and the salt and set it aside in a bowl.
  • Mix eggs and sugar until double volume.
  • Add oil and mix lightly.
  • Incorporate half mix flour, salt and baking powder and mix. After add yogurt, vanilla, strawberry paste and strawberry jam, mix, and finally add the remaining flour.
  • Empty the mixture into the bun and smooth the surface.
  • Bake in the oven for 45 minutes or until a cake tester comes out clean.
  • Cool down for 15 minutes on wire rack. Then, invert onto rack and cool completely.

MERINGUE:

Ingredients:

  • 3/8 Cup Egg Whites
  • 1/3 Cup Sugar
  • 3/4 Tablespoon Corn Syrup
  • 1 Teaspoon Vanilla Paste

Method:

  • Mix egg whites with sugar and corn syrup in bain-marie until the sugar dissolves.
  • Put in the Kitchen Aid and mix with the rods 7 minutes (until firm, shiny peaks form).
  • Add vanilla, mix and use immediately.
