#BundtBakers: Blueberries Kugelhopf Bundt Cake

Hoy es día de BundtBakers y estoy encantadísima de anunciaros que al fin me he animado a elegir yo el tema y organizar un poco a todos los participantes. Después de darle muchas vueltas y ver la cantidad de temas que habían salido me decidí por “Bundt Cakes Rellenos”, el relleno podía incluirse antes de horneado o una vez hecho, para hacer una especie de tarta.

Yo tenía muchas ganas de hacer una masa con levado y aproveché para estrenar el molde que gané en el sorteo del aniversario de I Love Bundt Cakes con la colaboración de Claudia & Julia, y no podía hacerlo mejor que con un dulce que lleva su mismo nombre. La receta original la vi en el blog de Jaleo en la Cocina, en su caso él proponía un Kugelhopf de Chocolate que también tiene una pinta espectacular (podéis verlo aquí). Además no quería dejar de contaros que esta receta también la he preparado para un concurso de Canal Cocina, por lo que también la tenéis en su web.

¡Ah! Y no olvidéis que al final os dejo todos los enlaces para que veáis las súper recetas que se han preparado, ¡a ver si podéis elegir sólo una!

INGREDIENTES:

Fermento:

  • 40gr Harina de Fuerza
  • 12gr Levadura Fresca Prensada
  • 10gr Azúcar Blanquilla
  • 80ml Leche Templada

Resto Ingredientes:

  • 60gr Mantequilla a Temperatura Ambiente
  • 40gr Azúcar Blanquilla
  • 1 Huevo Campero
  • 2 Yemas de Huevo Campero
  • 220gr Harina Fuerza
  • 1/4 Cucharadita Sal

Relleno:

  • Mermelada de Arándanos Enteros Pazo de Vilane

ELABORACIÓN:

  • Ponemos en un cuenco mediano los ingredientes del fermento y movemos rápidamente para que se integre.

  • Mientras tanto, en el cuenco de la amasadora ponemos la mantequilla a temperatura ambiente y batimos enérgicamente con unas varillas de mano hasta que blanquee. A continuación añadimos el huevo y las yemas e integramos.
  • En este mismo cuenco tamizamos la harina y la sal y mezclamos ligeramente. (Si no tienes amasadora no te preocupes, puedes realizar estos pasos directamente en un cuenco grande y luego amasar a mano.
  • Añadimos el fermento una vez pasado el tiempo y mezclamos con la herramienta gancho durante aproximadamente 10 minutos, hasta que la masa esté bien despegada de las paredes y no se nos quede muy pegada a las manos. Sacamos y trabajamos manualmente unos 3-4 minutos sobre una superficie lisa bien limpia y ligeramente enharinada.

  • Ponemos en un bol previamente engrasado, tapamos con film transparente y dejamos levar hasta que doble su volumen (aproximadamente una hora). Si tenemos prisa este levado se puede hacer más rápidamente en el horno a unos 30ºC.
  • Una vez haya doblado volumen sacamos con cuidado y ponemos sobre un papel vegetal. Con ayuda de un rodillo la estiramos con forma rectangular del tamaño aproximado de la bandeja del horno. Lo tapamos con un film engrasado y lo llevamos a la nevera durante unos 15-20 minutos.
  • Sacamos, descubrimos y ponemos la mermelada en la superficie sin llegar a los bordes para que luego no se nos salga. Yo he usado la de arándanos pero también debe quedar espectacular con la mermelada de frambuesa de Pazo de Vilane.

  • Ya cubierto con la mermelada lo enrollamos suavemente y preparamos nuestro molde engrasándolo y, si queréis, podéis poner arándanos en las hendiduras. Yo lo he hecho así para “coronar” la superficie.

  • Luego cogemos nuestra masa enrollada y la colocamos en el molde con cuidado y uniendo bien los extremos.

  • Ya en el molde lo cubrimos con un paño y dejamos que vuelva a doblar volumen y mientras precalentamos el horno a 180ºC con calor arriba y abajo (si vuestro horno tardase más en alcanzar esta temperatura no dudéis en encenderlo un poco antes).
  • Llevamos al horno y dejamos que se haga durante unos 35 minutos. Al ser un molde alto el mío llegaba muy arriba así que cuando llevaba unos 15 minutos lo cambié y lo puse con calor sólo en la parte de abajo, esto ya es ir viéndolo según sabemos que funciona nuestro horno.
  • Sacamos y dejamos en el molde sobre una rejilla para que temple y podamos desmoldarlo pasados unos 15 minutos. Luego, con delicadeza la damos la vuelta y dejamos enfriar totalmente sobre la rejilla. En este paso a mí se me quedaron algunos de los arándanos en el molde pero con una cucharilla la volví a colocar en su sitio y perfecta.
  • Tomar y saborear en frío. ¡Veréis cómo está!

BLUEBERRIES KUGELHOPF BUNDT CAKE

You can see all our of lovely Bundts by following our Pinterest board. June’s theme is “filled bundt cakes” so we had a lot of possibilities for our recipes. I choose a Kugelhopf with blueberries jam.

We take turns hosting each month and choosing the theme/ingredient. This month was my turn and I’m very happy with all the recipes! 😀

INGREDIENTS:

Ferment:

  • 40gr Strong Flour
  • 12gr Fresh Compressed Yeast
  • 10gr White Sugar
  • 80ml Warmed Milk

Rest of Ingredients:

  • 60gr Butter at Room Temperature
  • 40gr White Sugar
  • 1 Large Egg
  • 2 Large Egg Yolks
  • 220gr Strong Flour
  • ¼ Teaspoon Salt

Filling:

  • Blueberry Jam

METHOD:

  • Put in a medium size bowl all the ferment ingredients and mix quickly to integrate.

  • In the meantime, place the butter at room temperature in the bowl of the kneading machine and beat vigorously with a hand whisk until whitened.
  • In that same bowl, sieve the flour and salt and mix lightly. (Don’t worry if you don’t have a kneading machine, you can do these steps directly in a large bowl and then knead by hand).
  • Add the ferment once the time is over and and mix with the hook tool for about 10 minutes, until the dough is well detached from the walls and do not stick to your hands. Remove and work manually about 3-4 minutes on a smooth, clean and slightly floured surface.

  • Put in a previously greased bowl, cover with transparent film and leave it there until double it doubles its volume (approximately one hour). If we are in a hurry this process can be done faster in the oven at about 30ºC.
  • Once it doubles its volume, carefully remove it and put it on a piece of oven paper. Using a roller, stretch the rectangular shape of the approximately  size of the oven tray. Cover it with a greased film and take it to the refrigerator for about 15-20 minutes.
  • Take it out, uncover and put the jam on the surface without reaching the edges. I have used blueberry but it must also be great with the raspberry jam of Pazo de Vilane.

  • Once covered with the marmalade we roll it gently and prepare our mold greasing it and, if you want, you can put blueberries in the crevices. I have done so to “crown” the surface.

  • Then we take our rolled dough and place it in the mold carefully and uniting the ends well.

  • Once in the mold, we cover it with a cloth and let it doubles its size again and while we preheat the oven to 180ºC with heat up and down (if your oven takes longer to reach this temperature do not hesitate to preheat it a little earlier).
  • We take it to the oven and bake it for about 35 minutes. Being a high mold, mine got very high so after 15 minutes I changed it and put it with heat only in the bottom, this depends on everyone’s oven.
  • Take it out and leave in the mold on a grid until it cools down and unmold it after about 15 minutes. Then, gently turn it over and let it cool completely on the grid. In this step I had some of the blueberries left in the mold but I put them back in place using a teaspoon.
  • Eat and savor cold. You’ll see how tasty it is!
