#BundtBakers: Banana Daiquiri Bundt Cake [Bizcocho de Daiquiri de Plátano]

Este mes, Patricia de Patty’s Cake nos propuso un tema más que interesante para el reto BundtBakers. Su idea fue adaptar algún cócteles a un Bundt Cake y el reto apuntaba alto. Había que buscar el cóctel ideal para que la mezcla de sabores combinasen bien en un Bundt.

Después de mucho buscar y analizar posibles recetas, decidí apostar por transformar en un bizcocho un “Banana Daiquiri“, cuyos ingredientes principales son ron blanco, zumo de limón, azúcar y plátano. Ya de partida los ingredientes me parecían geniales pero cuando vi y probé el resultado terminé de convencerme de que había elegido bien. ¡Es uno de los Bundt Cakes más esponjosos que he hecho hasta ahora! Además es fresquito y muy suave, no sé cómo transmitiros en palabras lo bueno que está, así que os animo a que lo probéis y os sorprendáis conmigo… El molde que he usado es uno de mis favoritos de Nordic Ware, el Elegant Party (podéis encontrarlo en la tienda online de Claudia & Julia con envío gratuito).

Y como siempre, os recomiendo que veáis al final del post el resto de propuestas del grupo. Sólo os adelanto que os van a sorprender… 😋

INGREDIENTES:

  • 80gr Mantequilla
  • 120gr Azúcar
  •  2 Huevos L
  • 275gr Harina
  • 1’25 Cucharadita Levadura
  • 1 Cucharadita Bicarbonato
  • 1/2 Cucharadita Sal
  • 200ml Nata de Montar
  • 200gr Puré de Plátano Maduro
  • Zumo de Medio Limón
  • 3 ó 4 Cucharadas de Ron Blanco

ELABORACIÓN:

  • Precalentamos el horno a 170ºC.
  • Engrasamos el molde elegido y así lo tendremos listo para cuando llegue el momento. Yo he elegido el Elegant Party de Nordic Ware.
  • Preparamos un bol y tamizamos en él la harina, la levadura, el bicarbonato y la sal. Lo reservamos.
  • En otro bol, batimos la mantequilla y el azúcar hasta que blanquee y quede bien esponjoso.
  • Luego añadimos los huevos, 1 a 1, ligeramente batidos. No añadimos el siguiente hasta que el anterior esté bien integrado.
  • Incorporamos ahora el puré de plátano junto con el zumo de limón y el ron y mezclamos bien.
  • Por último, añadimos la mezcla de harina en tres veces, alternando con la nata (esta la añadimos en dos veces, terminando con la harina).
  • Lo vertemos en el molde y alisamos la superficie con ayuda de una cuchara o una espátula.
  • Lo horneamos unos 45 minutos o hasta que al pincharlo con un palillo este salga limpio.
  • Sacamos y dejamos templar unos 15 minutos en el molde sobre una rejilla. Pasado este tiempo desmoldamos y dejamos enfriar totalmente sobre la rejilla.

Ya sé que pensaréis que yo que voy a decir si lo he preparado, pero es que está irresistible!! ¿Lo probáis y me contáis? 😉

BANANA DAIQUIRI BUNDT CAKE

Today it’s the #BundtBakers day!! #BundtBakers is a group of Bundt loving bakers who get together once a month to bake Bundts with a common ingredient or theme. You can see all our of lovely Bundts by following our Pinterest board. April’s theme is “cocktails” so we had a lot of possibilities for our recipes. We have to select a cocktail and turn it into a Cake. I choose “Banana Daiquiri” Cocktail, whose main ingredients are white ron, banana, sugar and lime or lemon.

We take turns hosting each month and choosing the theme/ingredient. This month was Patricia’s turn from Patty’s Cake.

INGREDIENTS:

  • 1/3 Cup Unsalted Butter (room temperature)
  • 1/2 Cup Sugar
  • 2 Large Eggs
  • 2 1/2 Cup Flour
  • 1 1/4 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Cup Cream
  • 1 Cup Mashed Banana
  • Half Lemon Juice (you can use lime too)
  • 3 or 4 Spoon White Ron

METHOD:

  • Preheat oven to 340 F.
  • Spray the bundt pan (I used Elegant Party, from Nordic Ware).
  • Sift the flour, the baking powder, the baking soda and the salt and set it aside in a bowl.
  • Mix the butter with the sugar with a rod mixer or kneader until the butter is whitened and spongy.
  • Add eggs one by one and whisk.
  • Now it’s time to add the mashed banana, the lemon or lime juice and the ron and mix until incorporated.
  • Incorporate 1/3 flour mix, after adding 1/2 cream mix and repeat the process until ending with the flour mix.
  • Empty the mixture into the bun and smooth the surface.
  • Bake in the oven for 40 minutes or until a cake tester comes out clean.
  • Cool down for 15 minutes on wire rack. Then, invert onto rack and cool completely.

Now it’s time to eat and enjoy this Banana Daiquiri Bundt Cake! 😉
